Lemon Lover's French Bean Dip

This is a wonderfully lemony bean dip that is low fat and a great, healthy alternative to dairy dips. It is inspired by traditional bean spreads found in Provence. The traditional herb is rosemary, but my favorite is thyme, and simple parsley does a surprisingly creditable job.

Don’t go too heavily on the garlic or it will end up tasting too much like hummus. If you happen to have preserved lemons on hand, try them in this dip.

Ingredients
1 can white kidney beans (cannellini beans or other white bean), drained
1 clove of garlic
2 Tbls. olive oil
zests of two lemons
juice of one lemon
1 teas. salt
fresh minced herbs - thyme, rosemary, or parsley
Preparation
Put all ingredients into blender or food processor and blend until smooth.
Herbs can be added before or after blending.
Taste and adjust salt.
