| 1 cucumber, peeled and seeded |
| 1 Jalapeno, seeded and minced (many cooks use gloves when handling chilies) |
| 1/4 cup red pepper, finely diced |
| 2 or 3 spring onions, chopped |
| 1 Tbls. Sushi vinegar |
| 1 Tbls. Peanut Oil |
| Thai Fish Sauce or salt to taste |
